Salcë Kosi (Albanian Yogurt Sauce)


Salcë Kosi is a traditional Albanian strained yogurt sauce, similar to Greek tzatziki. Very easy to make and gets better with time.

Serves: 6-8
Time: 10 minutes

Ingredients

  • 3 cups Greek yogurt

  • 1 cucumber, grated and well squeezed

  • 1 clove garlic, finely minced

  • 3-4 mint leaves, finely minced

  • 2 tbsp olive oil

  • A pinch of salt

Method

  1. Grate the cucumber, then squeeze out as much excess water as possible using your hands or a clean tea towel.

  2. In a bowl, combine the Greek yogurt, squeezed cucumber, minced garlic, minced mint, 2 tablespoons of olive oil, and a pinch of salt. Mix everything together until well combined.

  3. Transfer the sauce to a serving bowl.

  4. Drizzle a little olive oil over the top just before serving.

  5. For best results, let the sauce rest in the refrigerator for at least 30 minutes before serving to allow the flavours to meld.

Tips

  • Gets better with time: This sauce improves as it sits, making it perfect for making ahead..

  • Serve with: Perfect alongside grilled meats, roasted vegetables, falafel, or as a dip for bread.

  • Storage: Keep in an airtight container in the fridge for up to 4 days.

  • Mint substitute: Fresh dill or parsley also work.
