Qofte (Albanian Spiced Meatballs)
Qofte is one of the most iconic Albanian dishes. It is a sort of spiced and flattened meatball usually eaten for breakfast with a yogurt beverage called dhallë, but it is perfect for every meal.

Ingredients
500g beef mince (a little fatty is better)
½ white onion, grated
1 slice of bread (soaked in milk and squeezed)
1 egg
1 tsp dried oregano
1 tsp paprika
3-4 mint leaves, finely minced
Good pinch of salt
Pinch of black pepper
Olive oil, for frying
Method
In a large bowl, combine the beef mince, grated onion, soaked and squeezed bread, egg, oregano, paprika, minced mint, salt, and black pepper.
Mix everything together very well with your hands until all ingredients are evenly distributed.
Shape the mixture into small, flattened oval patties.
Heat a splash of olive oil in a frying pan over medium heat.
Fry the qofte for a couple of minutes on each side, until golden brown and cooked through.
Drain on paper towels and serve hot.
Tips
Soaked bread: The bread soaked in milk adds moisture and tenderness to the meatballs.
Fatty mince: Using mince with a bit of fat keeps the qofte juicy during frying.
Serve with: Traditionally served with dhallë (a yogurt drink), or alongside rice, salad, or bread.
Make ahead: You can prepare the mixture and shape the patties in advance. Keep covered in the fridge until ready to cook.
Storage: Leftovers keep in the fridge for up to 3 days and reheat well in a pan or oven.
