Fërgesë
Fërgesë is an Albanian dip made with capsicums and feta cheese. Creamy, savoury, and incredibly simple to make.
Serves: 4 as a dip
Time: 20 minutes
Ingredients
4 long red capsicums (or 2 regular red capsicums)
2 tbsp olive oil
A pinch of salt
200g feta cheese
Method
Chop the capsicums into long strips about 1 cm thick.
Heat the olive oil in a frying pan over medium heat. Add the capsicum strips and a pinch of salt, then cover with a lid.
Cook until the capsicums are tender and softened, stirring occasionally.
Remove the cooked capsicums from the pan and set aside.
Crumble the whole block of feta cheese into the same pan over low heat. Let it melt gently for a few minutes.
Once the feta has melted, return the cooked capsicums to the pan and stir to combine. Transfer to a serving plate.
Tips
Serve warm or cold: This dip is delicious at any temperature. It is perfect with crusty bread or crackers.
Add herbs: Stir in some fresh oregano or parsley for extra flavour.
Make it spicy: Add a pinch of chilli flakes or a drizzle of chilli oil.
Storage: Keep in an airtight container in the fridge for up to 3 days.
Serving suggestion: Serve alongside olives, pickles, and fresh bread for a simple meze platter.
