Potato and Leek Soup

It’s a classic for a reason!

Cook time: 30 minutes

Ingredients

  • 1 tablespoon oil

  • 1 leek, washed and sliced

  • Salt and pepper

  • Optional: dried herbs (e.g. thyme)

  • 2 large potatoes, diced

  • 1 head of broccoli, roughly chopped (optional)

  • 1.5 litres stock or water

  • 1 can coconut cream

Method

  1. Heat oil in a large pot. Add leeks, salt, pepper, and optional herbs. Cook slowly until soft and fragrant.

  2. Add potatoes, broccoli (if using), stock or water, and coconut cream. Season with more salt to taste.

  3. Simmer for around 30 minutes, until potatoes are soft.

  4. Blend the soup until smooth. For a thicker soup, return to the heat and simmer to reduce slightly.

  5. Serve hot, optionally topped with cracked pepper or a swirl of cream.
