Homemade Pesto Scrolls

This recipe is from my wonderful grandma, who was one of the best bakers I have ever known.

Total cost: approx. $5 (less if you skip add-ins)
Servings: Makes 8–10 scrolls
Prep time: 10 minutes
Cook time: 13 minutes

Ingredients

  • 1 cup flour (plus up to 1/3 cup extra if needed)

  • 2 1/2 teaspoons baking powder

  • 1/2 cup milk

  • 1 egg

  • 1 1/2 cups grated cheese (any kind)

  • Optional fillings: pesto, chutney, salami, more cheese

Method

  1. Preheat oven to 220°C (428°F).

  2. In a large bowl, mix all ingredients until a dough forms. If the dough is too sticky, add flour a little at a time until it’s workable.

  3. Roll the dough out into a rectangle. Spread with pesto or any fillings you like, then roll up and slice into scrolls.

  4. Place on a lined baking tray and bake for 13 minutes or until golden and puffed.

  5. Serve warm with the soup or on their own as a snack.
