Kiwifruit Roll Cake

Time: 30 minutes active + cooling time

Ingredients

  • 4 eggs

  • ½ cup sugar

  • ⅔ cup plain flour

  • 2 tbsp plain oil

  • ¾ cup cream, whipped

  • 4 kiwifruit, sliced (or any fruit you like)

Method

  1. Preheat your oven to 200°C . Line a 30cm x 40cm baking tray with baking paper.

  2. In a large bowl, whisk the eggs and sugar together for a few minutes until thick, pale, and ribbon-like.

  3. Gently fold in the flour until just combined, then fold in the oil.

  4. Spread the batter evenly onto the prepared tray. Bake for 6 minutes, until light golden and springy to the touch.

  5. Once out of the oven, let it cool for a few minutes until you can handle it. Turn it onto a piece of baking paper on top of a tea towel. Peel off the base paper.

  6. Roll the sponge up from the short end while still warm, using the tea towel and paper to help you. Let it cool completely in this rolled position.

  7. Once cool, gently unroll the sponge. Fill with whipped cream and arrange the sliced kiwifruit over the cream.

  8. Carefully re-roll the cake. Wrap in baking paper and chill for at least 1 hour before slicing.
