Cordon Bleu with Homemade Fries
Tonight we’re making Cordon Bleu. I love this recipe because it uses just a handful of ingredients - cheese, ham, chicken - things I usually already have in the fridge. It’s crispy, cheesy, and absolutely worth the little extra effort.

Ingredients
For the fries:
· 2 potatoes
· Around 700mL oil (for frying)
For the cordon bleu:
· 2 chicken breasts
· 4 slices cheese
· 4 slices ham
· Salt and pepper
· 2 tablespoons flour
· 1 egg + splash of milk (whisked)
· 1/2 cup breadcrumbs (I used panko, but use whatever you’ve got - even homemade)
Method
1. Make the fries:
o Wash, slice, and rinse the potatoes.
o Dry well using a clean tea towel.
o Place in a pot and cover with oil.
o Cook over medium heat for 10–15 minutes, stirring to prevent sticking, until golden.
2. Prep the chicken:
o Slice each chicken breast in half lengthwise.
o Flatten between baking paper using a rolling pin or similar.
o Lightly season with salt and pepper.
o Place a slice of cheese and ham on one half, then sandwich with the other half.
3. Coat the chicken:
o Dredge each piece in flour, then dip into the egg mix, then coat in breadcrumbs.
4. Fry the chicken:
o Remove fries from the oil and set aside.
o Heat oil to around 180°C (test with a wooden spoon - if bubbles form, it’s ready).
o Fry the chicken until golden and cooked through - about 4 minutes per side.
5. Refry the fries:
o Toss the fries back into the oil for another minute to crisp them up.
6. Serve:
o Plate up with a side salad, mustard, and mayo.
