One Pot Chicken Soup

Welcome to the first recipe in the new flat: one pot chicken soup! This is one of my favourite things to make after work - it's comforting, full of flavour, and all done in one pot. You can use whatever veggies you have, and it’s easy to make a big batch for the week.

Chicken soup alice taylor eats

Ingredients

·       3 chicken thighs, bone-in (or use drumsticks, a whole chicken, etc.)

·       A splash of olive oil

·       2 celery sticks, diced

·       2 potatoes, diced

·       2 carrots, diced

·       2 onions, diced

·       1 teaspoon turmeric

·       Zest of 1 lemon

·       A handful of rice

·       Salt, to taste

·       Chilli oil (optional, for serving)

Method

1.    In a large pot, heat a splash of olive oil over medium heat. Season the chicken and fry until golden on both sides.

2.    While the chicken browns, dice your veggies.

3.    Add the veggies to the pot with the chicken. Pour in enough water to cover everything (about 2.5 litres).

4.    Add turmeric, lemon zest, and a good pinch of salt.

5.    Simmer gently for 1 hour.

6.    Remove the chicken and allow it to cool slightly. Shred the meat off the bone and return it to the pot.

7.    Add a handful of rice and simmer for another 15 minutes or until the rice is cooked.

8.    Serve hot with a drizzle of chilli oil if you like a little kick.
