Chocolate fudge cookie

Ingredients

  • 100g butter (or 125g oil)

  • 1 cup sugar

  • 1 egg

  • 1¼ cups plain flour

  • ¼ tsp baking powder

  • ¼ cup cocoa powder

  • 1 tbsp oil

  • A pinch of salt

  • Optional: chopped chocolate or chocolate chips

Method

  1. Preheat your oven to 170°C . Line a baking tray with baking paper.

  2. In a large bowl, cream together the butter and sugar until combined. Add the egg and mix well.

  3. Add the flour, baking powder, cocoa powder, and a pinch of salt. Mix until combined.

  4. Add the oil and mix again. If using, fold through your optional chocolate chips.

  5. Roll the dough into 8 balls and place them on the prepared tray, leaving space for spreading. Press each ball down slightly with your fingers.

  6. Bake for 14 minutes, until the edges are set but the centres are still soft. Let cool on the tray for 5 minutes before transferring to a wire rack.

Tips

  • Chewy texture: The cookies will firm up as they cool, so do not overbake them.

  • Use oil: For a softer, dairy-free cookie, use oil instead of butter.

  • Chocolate free: These are delicious without any added chocolate if you want to keep them extra simple.

  • Storage: Keep in an airtight container at room temperature for up to 5 days.

  • Freeze the dough: Roll the dough into balls and freeze. Bake from frozen, adding a couple of minutes to the cooking time.
