Disclaimer: this is my take on a trileçe.
Serves: 8-10
Time: 1 hour + chilling
Ingredients
For the Sponge:
4 eggs
½ cup (100g) sugar
⅔ cup (100g) plain flour
For the Milk Mixture:
350ml milk
250ml cream
100g sweetened condensed milk
1 tsp vanilla (optional)
For the Caramel (Optional):
125g sugar
¼ cup boiling water
1 tbsp cornflour, dissolved in a little water
Extra sweetened condensed milk, for decoration (optional)
Method
Preheat your oven to 190°C. Grease and line a cake pan or oven tray.
In a large bowl, whisk the eggs and sugar for 3-5 minutes until thick, pale, and fluffy.
Gently fold in the flour until just combined. Pour the batter into the prepared tin.
Bake for 10-15 minutes, until light golden and a skewer inserted into the centre comes out clean. Allow to cool fully.
Make the milk mixture: In a bowl, combine the milk, cream, sweetened condensed milk, and vanilla (if using). Mix well.
Pour the milk mixture evenly over the cooled sponge. Let it soak in.
Make the caramel (optional): Melt the sugar in a saucepan over medium heat until golden. Carefully add the boiling water and whisk until dissolved. Add the dissolved cornflour and cook until the mixture comes to a boil. Allow to cool slightly.
Pour the caramel over the soaked cake. If desired, drizzle with extra sweetened condensed milk for decoration. Refrigerate for at least 2 hours before serving.
