Orange and almond cake
Serves: 8-10
Cost: $9.50 NZD (approx)
Time: 1 hour
Ingredients
1 orange
1 cup sugar
2 cups ground almonds
2 tbsp cornflour (cornstarch)
1 tsp baking powder
3 eggs
¼ cup oil or melted butter (olive oil works beautifully)
Method
Preheat your oven to 180°C. Grease and line a 20cm cake tin.
Chop the orange into small cubes (skin and all) and place in a small pot. Cover with water and boil for 10 minutes, until slightly softened.
Transfer the orange pieces to a blender, reserving ¼ cup of the cooking liquid. Blend until smooth.
Allow the orange puree to cool slightly before using (otherwise it could scramble the eggs).
In a large bowl, combine the orange puree with the sugar, ground almonds, cornflour, baking powder, eggs, and oil. Whisk until well combined.
Pour the batter into the prepared tin.
Bake for 40-45 minutes, or until a skewer inserted into the centre comes out clean. Let cool in the tin before serving.
