Mediterranean fish

This is the easiest and fastest way to cook fish. Also, if you want to start eating more fish or struggle to enjoy it sometimes, I really do think this is the best way to cook it.

Serves: 4
Time: 20 minutes

Ingredients

  • 400g fish, filleted and chopped into pieces (any fresh or frozen fish works)

  • A generous drizzle of olive oil

  • 4 cloves garlic, sliced

  • 1 tbsp capers

  • 3 tbsp pitted olives

  • 1 strip lemon peel

  • 1 tsp oregano (optional)

  • A pinch of chilli (optional)

  • 1 can (400g) chopped tomatoes

  • Salt and pepper

Method

  1. In a large pot, heat the olive oil over medium heat. Add the garlic, capers, olives, and lemon peel. Fry for 1 minute until fragrant.

  2. Add the oregano and chilli (if using) and stir.

  3. Add the tomatoes, salt, and pepper. Simmer for 1 minute.

  4. Gently add the fish pieces to the pot, season again, and cover with a lid.

  5. Cook until the fish is cooked through – about 5-7 minutes (longer if using frozen fish).

  6. Serve immediately with bread, rice, pasta, or whatever you like.
