Mediterranean fish
This is the easiest and fastest way to cook fish. Also, if you want to start eating more fish or struggle to enjoy it sometimes, I really do think this is the best way to cook it.
Serves: 4
Time: 20 minutes
Ingredients
400g fish, filleted and chopped into pieces (any fresh or frozen fish works)
A generous drizzle of olive oil
4 cloves garlic, sliced
1 tbsp capers
3 tbsp pitted olives
1 strip lemon peel
1 tsp oregano (optional)
A pinch of chilli (optional)
1 can (400g) chopped tomatoes
Salt and pepper
Method
In a large pot, heat the olive oil over medium heat. Add the garlic, capers, olives, and lemon peel. Fry for 1 minute until fragrant.
Add the oregano and chilli (if using) and stir.
Add the tomatoes, salt, and pepper. Simmer for 1 minute.
Gently add the fish pieces to the pot, season again, and cover with a lid.
Cook until the fish is cooked through – about 5-7 minutes (longer if using frozen fish).
Serve immediately with bread, rice, pasta, or whatever you like.
