Bread and Butter Pudding

Ingredients

  • 400g bread (any bread will work – old bread is even better)

  • 2 cups frozen fruit, or 1 cup chocolate chips, or dollops of marmalade or Nutella

  • 2¼ cups milk

  • ⅓ cup cream

  • 3 eggs

  • ⅓ cup sugar

  • 1 tsp cinnamon (optional)

  • 1 tsp vanilla (optional)

  • Extra sugar for sprinkling

Method

  1. Dice the bread into cubes. Place in a baking dish along with your chosen filling (frozen berries, chocolate chips, marmalade, or Nutella).

  2. In a bowl, whisk together the milk, cream, eggs, sugar, and vanilla (if using).

  3. Pour the custard mixture evenly over the bread. Gently press the bread down to ensure it soaks up the liquid.

  4. Let it sit for at least 20 minutes, or cover and refrigerate overnight for an even richer flavour.

  5. Preheat your oven to 180°C. Sprinkle the top with extra sugar.

  6. Bake for 40 minutes, or until the pudding is golden and puffed up. Serve warm.
