Fërgesë

This is one of the many recipes of fërgesë you can find around Albania. I like this one the most because it is very easy and you only need a few ingredients.

Ingredients

  • 2 red capsicums, chopped

  • 500g ricotta cheese

  • 10g olive oil

  • Salt, to taste

Method

  1. Heat the olive oil in a pan over a medium low heat.

  2. Add the chopped capsicums and a pinch of salt. Cook gently for 20 to 30 minutes, stirring occasionally, until the capsicums are very soft and cooked down.

  3. Use a fork to mash the cooked capsicums in the pan.

  4. Add the ricotta cheese and stir until well combined with the capsicum. Cook for another 2 to 3 minutes until heated through.

  5. Check the seasoning and add more salt if needed.

  6. Serve warm or cold. It is delicious both ways.

Tips

  • Customise it: This is a very versatile dish. Feel free to add crumbled feta cheese, chopped fresh tomatoes, or herbs like oregano or mint.

  • Traditional versions: In Albania, this dish is often made with additions like lamb liver or other meats. You can add cooked, finely chopped meat if you prefer a non-vegetarian version.
