Fërgesë
This is one of the many recipes of fërgesë you can find around Albania. I like this one the most because it is very easy and you only need a few ingredients.
Serves: 4 as a side dish
Cost: $9.00 NZD (approx)
Time: 35 minutes
Ingredients
2 red capsicums, chopped
500g ricotta cheese
10g olive oil
Salt, to taste
Method
Heat the olive oil in a pan over a medium low heat.
Add the chopped capsicums and a pinch of salt. Cook gently for 20 to 30 minutes, stirring occasionally, until the capsicums are very soft and cooked down.
Use a fork to mash the cooked capsicums in the pan.
Add the ricotta cheese and stir until well combined with the capsicum. Cook for another 2 to 3 minutes until heated through.
Check the seasoning and add more salt if needed.
Serve warm or cold. It is delicious both ways.
Tips
Customise it: This is a very versatile dish. Feel free to add crumbled feta cheese, chopped fresh tomatoes, or herbs like oregano or mint.
Traditional versions: In Albania, this dish is often made with additions like lamb liver or other meats. You can add cooked, finely chopped meat if you prefer a non-vegetarian version.
Serving suggestion: Enjoy it as a dip with crusty bread or schiacciatina, or as a side dish with grilled meats.
Make ahead: This dish tastes even better the next day, making it perfect for preparing in advance.
