Vegan Chocolate Muffins

Makes 6 large muffins

Cost per muffin: $0.75 NZD approx

 

Ingredients:

2 apples, grated (or you can use ¾ cup apple sauce or 2 eggs)

½ cup brown sugar (use any sugar you like)

½ oil (I use sunflower oil but use any oil or melted butter)

1 cup plant-based milk (I use coconut milk – you can also use regular milk)

1 ¾ self-raising flour (or 1 ¾ plain flour and 2 tsp baking powder)

3 tbsp cocoa

Pinch of salt

Optional: spices like cinnamon, chocolate chips, anything you like!

 

Method:

  1. In a bowl combine grated apple, brown sugar, oil, and plant-based milk, and whisk to combine.

  2. Add the flour, cocoa, salt and anything else you want to add and mix until just combined.

  3. Place into 6 large muffin tin and bake at 190°C (374°F) for around 15-20 minute, until a skewer inserted in the middle comes out clean.

Tip: you can keep these in the freezer and microwave from frozen when you want them!
