Self-Saucing Pudding
A magical, comforting dessert that makes its own rich, fudgy sauce as it bakes. It is incredibly cheap, easy to make, and perfect for a cosy night in.

Ingredients
For the Batter:
⅓ cup brown sugar
1 cup plain flour (or GF flour)
1 tsp baking powder
⅓ cup cocoa powder
Pinch of salt
1 egg (or 1 flax egg/grated apple)
½ cup milk (any type)
3 tbsp oil or melted butter
For the Sauce:
¼ cup cocoa powder
¾ cup brown sugar
2 cups boiling water
Method
Preheat oven to 180°C (160°C fan). Grease a medium-sized ovenproof dish.
In a bowl, mix the ⅓ cup sugar, flour, baking powder, ⅓ cup cocoa, and salt.
Add the egg, milk, and oil. Stir until just combined into a thick batter.
Spread the batter into the prepared dish.
In a separate bowl, mix the ¼ cup cocoa and ¾ cup brown sugar. Sprinkle this dry mixture evenly over the batter.
Do not stir. Gently pour the 2 cups of boiling water over the entire surface.
Bake for 35-40 minutes. The cake will rise to the top, and a thick, saucy layer will form underneath. Serve hot.
Tips
The magic trick: Do not stir after adding the boiling water! This is what creates the separate layers of cake and sauce.
Vegan option: Use a flax egg, plant-based milk, and oil to make this pudding vegan.
Serve hot: This dessert is best served warm from the oven. The sauce will thicken as it cools.
Reheating: Reheat portions in the microwave for a quick, comforting treat.
Serving suggestion: Delicious on its own or with a scoop of vanilla ice cream or a dollop of cream.
