Scrolls

Makes: 8-9 scrolls
Time: 25 minutes
Ingredients
1¼ cups self-raising flour (or 1¼ cups plain flour + 2 tsp baking powder)
½ cup milk (any type)
1 egg
Choose:
Sweet: 2 tbsp diced butter
Savoury: ½ - 1½ cups grated cheese
Plus your fillings: e.g., pesto & feta, Nutella, Vegemite, jam, chutney, ham & cheese.
Method
Preheat oven to 220°C . Line a baking tray.
In a bowl, mix the flour, milk, egg, and your chosen butter or cheese into a rough dough. Add an extra 1-2 tbsp flour if too sticky.
On a floured surface, roll the dough into a rectangle.
Spread your chosen filling evenly over the dough.
Roll up from the long side, then cut into 2.5cm thick slices.
Place scrolls on the tray, slightly apart. Bake for 13 minutes, or until golden. Cool for 10 minutes before serving.
Tips
Quick dough: Handle it minimally for the lightest texture.
Go wild with fillings: Use whatever you have—savoury, sweet, or even leftovers.
Dietary swaps: Use gluten-free flour + 2 tsp baking powder, dairy-free alternatives, or a flax egg (1 tbsp ground flax + 3 tbsp water).
Freezer-friendly: Freeze baked scrolls in an airtight container. Reheat from frozen in the oven or microwave.
