Pineapple Cake

Ingredients:

  • 1 can sliced pineapple

  • 150g melted butter or (or 125mL oil)

  • ½ cup sugar

  • 2 eggs

  • 1 1/3 cup self-raising flour (or 1 1/3 cup plain flour and 1 tsp baking powder)

Method:

  1. Line a 21cm cake pan with baking paper and place the sliced pineapple rings on the bottom. If you have any leftover pineapple just dice that up.

  2. In a bowl whisk together the butter, sugar, eggs and diced pineapple.

  3. Add the flour and fold until just combined.

  4. Smooth the batter over the diced pineapple.

  5. Bake at 180 degrees Celsius for around 35 minutes or a skewer, when inserted in the middle comes out clean.

  6. Turn it upside down and pour over the remaining pineapple syrup or juice to soak into the cake.
