Orange and Yogurt Cake
Ingredients:
For the cake:
¾ cup sugar
2 eggs
1 cup yogurt
½ cup oil (I use canola but use anything you like – or melted butter!)
Zest of 4 oranges
2 cups self raising flour (or you can use 2 cups regular flour and 2 tsp baking powder)
A pinch of salt
For the syrup:
Juice of 4 oranges
1 tbsp sugar
Method:
Whisk together sugar, eggs, yogurt, oil and orange zest until combined. Add the flour and salt and stir until just combined.
Pour into a greased and lined cake pan (you can use a loaf pan or a 21cm cake pan or ring tin!) and bake at 170 degrees Celsius for 35-45 minutes).
Meanwhile make the syrup by heating the orange juice and sugar and the sugar has dissolved.
When the cake come out of the oven, poke lots of holes with a skewer and pour over the syrup. Let sit for at least 10 minutes before unmolding.
For the optional yogurt cream:
½ cup cream
2 tbsp yogurt
Vanilla paste, optional
Whip together all the ingredients.
