Orange and Yogurt Cake

Ingredients:


For the cake:

  • ¾ cup sugar

  • 2 eggs

  • 1 cup yogurt

  • ½ cup oil (I use canola but use anything you like – or melted butter!)

  • Zest of 4 oranges

  • 2 cups self raising flour (or you can use 2 cups regular flour and 2 tsp baking powder)

  • A pinch of salt


For the syrup:

Juice of 4 oranges

1 tbsp sugar


Method: 

  1. Whisk together sugar, eggs, yogurt, oil and orange zest until combined. Add the flour and salt and stir until just combined.  

  2. Pour into a greased and lined cake pan (you can use a loaf pan or a 21cm cake pan or ring tin!) and bake at 170 degrees Celsius for 35-45 minutes).

  3. Meanwhile make the syrup by heating the orange juice and sugar and the sugar has dissolved.

  4. When the cake come out of the oven, poke lots of holes with a skewer and pour over the syrup. Let sit for at least 10 minutes before unmolding.


For the optional yogurt cream:

  • ½ cup cream

  • 2 tbsp yogurt

  • Vanilla paste, optional

     

  1. Whip together all the ingredients.
