Easy Egg-Free Burger Buns

A healthier, cheaper alternative to store-bought buns. These are soft, fluffy, and made with flaxseed for extra goodness, no eggs needed!

Makes: 6 buns
Cost: $1,60 NZD aprox.
Time: 2 hours (includes proving)

 

Ingredients

  • 300g high-grade flour

  • 180g milk (any type)

  • 2 tbsp ground flaxseed

  • 1 tbsp dry yeast

  • 1 tsp sugar

  • 1 tsp salt

  • 1 tbsp butter, softened

  • approx. 20ml warm water (for yeast)

 

Method

  1. In a small bowl, bloom the yeast in the warm water until it becomes a smooth, frothy paste.

  2. In a large bowl, combine the flour, milk, ground flaxseed, sugar, salt, butter, and the bloomed yeast. Knead energetically for a few minutes until you have a smooth, elastic dough.

  3. Cover the bowl and let the dough rest for 30 minutes.

  4. Divide the dough into 6 equal pieces and roll each into a smooth ball. Place them on a lined baking tray, leaving space between each.

  5. Cover and let proof for 30–60 minutes, until the buns have doubled in size.

  6. Preheat oven to 170°C . Bake for 15 minutes, or until golden brown. Cool on a wire rack before slicing.

 

Tips

  • Flaxseed: Ground flaxseed adds fibre and helps bind the dough without eggs.

  • Make ahead: These buns freeze beautifully. Thaw and toast before serving.

  • Dairy-free: Use plant-based milk and dairy-free butter
