Budget Friendly Pancakes
A classic, foolproof recipe for light and fluffy pancakes. Incredibly cheap and easy to customise with what you have in your pantry.
Serves: 2 (makes 8-10 small pancakes)

Ingredients
¾ cup milk
1 tbsp vinegar (or lemon juice)
1 egg (or 1 small grated apple)
1 tbsp oil or melted butter
1 tbsp sugar
1 cup self-raising flour
Method
In a jug or bowl, combine the milk and vinegar. Let it stand for 5 minutes to create a homemade buttermilk.
Add the egg (or grated apple), oil, and sugar to the buttermilk. Whisk to combine.
Gently fold in the self-raising flour until just combined. Do not overmix; a few lumps are fine. If the batter is too thick, add a splash more milk or water until it reaches a pourable consistency.
Heat a non-stick frying pan over medium heat and lightly grease with oil or butter.
Pour small rounds of batter onto the hot pan. Cook until bubbles appear on the surface and the edges look set.
Flip and cook for another 1-2 minutes until golden brown and cooked through.
Serve immediately with your favourite toppings.
Tips
Gluten-free: Use 1 cup gluten-free flour and add 1 tsp baking powder.
Vegan: Use the grated apple instead of an egg.
Flavour it: Add a pinch of cinnamon, a few drops of vanilla extract, or a handful of blueberries to the batter.
Keeping them warm: Place cooked pancakes on a baking tray in a low-temperature oven (about 100°C) while you finish the batch.
Toppings: Enjoy with maple syrup, honey, fresh fruit, yogurt, or a simple squeeze of lemon juice and sugar.
