Biscotti
This recipe comes straight from my partner’s mum, who makes the kind of biscotti you cannot be trusted around. The first time I tried them, I ate an entire box on a drive from Florence to Rome! They’re simple, endlessly adaptable, and perfect for using whatever fruit, nuts, seeds, spices, or chocolate you already have. They also make amazing Christmas gifts: one batch costs about $6.80 NZD and fills at least 12 bags!
Ingredients
150g oil (or 200g butter)
300g sugar (any sugar will work!)
3 eggs
500g plain flour
2 tsp baking powder
Pinch of salt
100g nuts or seeds (whatever you have will work - I used sunflower seeds and walnuts)
150g dried fruit, chocolate
You can also add whatever spices, orange zest, etc
Method
Mix the wet ingredients
In a large bowl, combine the oil (or butter), sugar, and eggs.Add the dry ingredients
Add the flour, baking powder, and salt. Mix until almost combined.Add the extras
Stir in all your nuts, seeds, fruit, chocolate, and any spices or zest.
Turn the dough out onto a clean surface and knead gently until smooth.Shape the logs
Divide the dough into four portions and roll each into a log about 2 cm thick.
Arrange them on a lined baking tray.First bake
Bake at 170°C for 13–15 minutes, until lightly golden.Slice
Let the logs cool for about 10 minutes, then slice into 1 cm-thick pieces.Second bake
Lower the oven to 150°C and bake the biscotti for 13–17 minutes, until crisp and golden.
