Basic Muffin Recipe

This is my basic muffin recipe. I used pears and white chocolate but feel free to use whatever flavourings you like!

Makes: 12 muffins
Cost: $1.90 NZD for base mixture (plus toppings)
Time: 25 minutes

Ingredients

Base Mixture:

  • ½ cup sugar

  • ½ cup oil (sunflower, or melted butter)

  • ½ cup yogurt

  • ½ cup milk

  • 1 egg

  • 2 cups plain flour (or gluten-free flour)

  • 2 tsp baking powder

Flavourings (Choose Your Own):

  • Ideas: ½ cup white chocolate + 2 diced pears, 2 tbsp cocoa for chocolate muffins, chocolate chips, mashed banana, berries, apples, etc.

Method

  1. Preheat oven to 200°C (180°C fan). Line a 12-hole muffin tin with cases.

  2. In a large bowl, whisk together the sugar, oil, yogurt, milk, and egg until smooth.

  3. Add the flour and baking powder. Fold gently until just combined.

  4. Add your chosen flavourings (e.g., chocolate chips and diced pear) and stir briefly to distribute.

  5. Divide the batter evenly between the muffin cases.

  6. Bake for 15 minutes, or until a skewer inserted into the centre comes out clean. Cool on a wire rack.

Tips

  • Do not overmix: Stir the batter only until the flour disappears. Overmixing makes dense, tough muffins.

  • Endless variations: Try blueberries and lemon zest, apple and cinnamon, or raspberry and white chocolate.

  • Gluten-free: Works perfectly with gluten-free flour. Add an extra tablespoon of milk if the batter seems too thick.

  • Freezer-friendly: These muffins freeze beautifully. Thaw at room temperature or warm in the microwave.

  • Storage: Keep in an airtight container at room temperature for up to 3 days.
